Turnips are the forgotten root vegetable your family will love!

During the winter you will see turnips at your favorite farmers market stands. These often overlooked root vegetables are an excellent source of fiber. Smashed Parmesan Turnips

Ingredients:

  • 12 medium turnips
  • 3 cloves garlic, minced
  • 1 C parmesan cheese
  • kosher salt and freshly ground pepper, to taste
  • chopped fresh herbs of choice, such as chives or parsley

Directions:

  1. Peel and boil turnips for about 20-30 minutes until fork tender, then remove from the water.
  2. Dry the turnips well on paper towels or a clean kitchen towel.
  3. Using a potato masher or the bottom of a glass, press down on the turnips until they are about ¼’ in thickness.
  4. Allow the turnips to dry further.
  5. Place all smashed turnips on a parchment-lined baking sheet.
  6. Brush with olive oil and sprinkle with parmesan cheese, flaky kosher salt and freshly ground pepper.
  7. Carefully flip the smashed turnips over and brush the other side with olive oil and sprinkle with parmesan cheese, salt and pepper.
  8. Bake for at 375 for 20 minutes.
  9. Flip the turnips and bake for an additional 10-15 minutes or until desired doneness.
  10. Remove from the oven and top with minced herbs (chives or parsley) or bacon (if desired). These are also great dipped in your favorite sauce (marinara, ranch, etc.)
